Baking in general began as a therapeutic release for an RN who works in a rural but very busy Emergency Department. What started as treats for her coworkers has launched into a cottage business in San Marcos, Texas, specializing in Macarons.
Many people pronounce these as 'mac-a-roon' and not 'mac-a-rohn'. However, as the photo on the right shows, these are two very different cookies.
Both are meringue-based, but the cookie on the right is full of coconut and takes about 30 minutes to make. The little diva on the left can take hours to bake and days to mature for the perfect cookie!

French macarons are delightful meringue-based cookies typically considered gluten-free as they are made with almond flour. They are delicate little divas but are well worth the time, effort, and cost. While they can be consumed straight from the fridge, or even the freezer, they are best served after bringing them to room temperature. Anything longer and the cream center can become too soft and ooze out the sides. However, no one way is wrong!
If you aren’t enjoying your macarons straight away, they can be stored (in an airtight container) in the refrigerator for up to a week. Any longer than that, consider moving them to the freezer where they will await your return for up to several months. To thaw, return the container to the fridge the day before and then allow that magical room temperature time of about a half-hour before consuming. This should prevent condensation.
OH, and take care when handling them as they are very delicate and can easily crack.
Pricing depends on a number of factors such as special flavors, colors, decorations, and of course size. In general, our macs are sold as medium-sized cookies (about two bites) with minimal or no decoration at $30 per dozen. Additional colors, sparkle, decorations, and flavors will cost a smidge more.

While macarons are generally a gluten-free product, they are made with almond flour, eggs, sugar, and some type of dairy (milk, cream, and/or butter. Let us know if you have specific dietary needs!

Macaronage is the term used for mixing the batter. Many will use the term "figure 8", but I fear that it may be overmixed if you take it that far. Others use "lava," but I fear not many understand that term either. This is my attempt to describe to what point I mix my batter.
